Come Bake with Poland!

Recipe:

Dough
1 cup milk
4 tsp. instant dry yeast
3⅔ cup all-purpose flour
6 egg yolks
½ cup sugar
½ cup butter (1 stick)

Filling
3 cups wild blueberries
1 tbsp. potato starch

Glaze
1 egg
1 tsp. milk

Crumb topping
⅓ cup all-purpose flour
2.5 tbsp. butter
1 tbsp. sugar

Instructions:

Heat the milk to 85°F, mix with yeast and a spoonful of flour, and let it sit for 10 minutes. In the meantime, beat the eggs in a mixer with sugar until smooth, and add the rest of the flour and milk with yeast. Knead on a dough hook for about 3 minutes until a homogeneous mass is formed. Continue mixing, gradually adding butter cut into small cubes over the next 5 minutes. After the butter and dough have been thoroughly combined, knead for another 10 minutes.

Leave for about 1.5 hours under an airtight cover or wrapped in cling film. Divide into 16 pieces, each about 70g. Flatten the pieces of dough, and put approx. 2 tbsp. of berries mixed with potato flour in the middle and seal the dough thoroughly, giving the roll a slightly oblong shape. Place on a baking tray lined with baking paper and leave the rolls for about 30 minutes to rise.

In a bowl, mix cold, finely-diced butter with flour and sugar. Knead into a brittle mass.

Beat the egg with milk, spread the mixture over the buns and sprinkle with the crumb topping just before putting them in the oven. Bake at 350°F. After baking, it is best to leave them to cool on a wire rack.
